In this episode we bring you a delicious and fresh combination. Recipe: Baked sole with citrus fruits, mint and chives 2.5 kg - whole sole arranged 250 g - blanched young onions 5 sliced garlic cloves 1 unit - degummed lemon 1 unit - degummed orange 1.5 dl - extra olive oil virgin 0.5 dl - lemon juice 0.5 dl - tangerine juice 2 leaves - bay leaves 100 g - sliced green and red pepper 15 leaves - leaf mint as much as traditional sea salt as much ground pepper Parchment paper Remove the sole's fins, the intestine and Rinse the fish in water. Dry it and season the fish with coarse salt and place the mint leaves in the belly of the fish. Before preparing the stew, blanch the young onions in boiling water. In a roasting pan that can be heated, brown the onion, garlic and bay leaf in 50 ml of olive oil, add the fish and cool with the lemon juice and tangerine juice. Add the chopped peppers, lemon wedges and orange wedges over the fish. Add more olive oil and cover the fish with baking paper. Brush the paper with olive oil again so it sticks to the fish. The fish must be well covered with the paper. Then bake at 180ºC for 20 minutes. Finally, remove the paper sheet and serve.
