In this episode we prepare a recipe that comforts the soul. Recipe: Lamb with grains, vegetables, mint and sausage 2.5 kg - leg of lamb 1 kg - cooked chickpeas 1 unit - cut chorizo 1 unit - Moorish chorizo 200 g - pumpkin in cubes 200 g - green beans in stalks 200 g - turnip in cubes 200 g - sweet potato in cubes 300 g - chopped onion 5 cloves of garlic, sliced 1 tbsp. tea - chopped ginger (optional) 1 teaspoon. tea - cumin powder 200 g - fresh tomato in cubes 1 dl - white wine 2 dl - vegetable broth 1.5 dl - extra virgin olive oil 10 mint leaves 1 tbsp. soup - chopped parsley qb traditional sea salt qb peppercorns Season the lamb with salt, pepper, a little olive oil and vinegar. Leave to marinate for 3 hours. In a pan, heat water and place the sausages to cook over low heat. Once they are cooked, remove them from the water and set aside. Add olive oil to a pan and sear the lamb on both sides. Add the onion, garlic, ginger and cumin. Let it brown and add the white wine along with the chickpea cooking water. Add the tomato and tomato juice. Cover the pan and let it cook for about an hour and a half. Separate some of the cooked chickpeas and add some of the lamb cooking broth. Blend until you obtain a homogeneous cream. Add this cream to the pan to combine with the remaining lamb sauce. Add the remaining grain to the pan along with the blanched carrot, sweet potato and pumpkin; cover the pan to heat the vegetables. Cut the sausages and add them too. Let it settle a little. Adjust the seasoning and before serving add the mint, parsley, turnip and green beans. Fold everything together, let it boil for another 3 minutes and it's ready to serve. To cook the chickpeas: Place the chickpeas in a pan with water, salt, onion, bay leaves and a tied sprig of parsley. Let it cook for about 1 hour or until it is soft. Drain the grain and reserve the cooking water for the lamb.
