Recipe: Roast beef in brine with beetroot and orange compote Roast beef 2.4 kg - empty Azorean beef 6 cloves of garlic 20 g - Dijon mustard 1 l - milk 0.5 dl - extra virgin olive oil 1 leaf - bay leaves 500 g - traditional sea salt 1 g - black peppercorns Compote 600 g - cooked beetroot 2 units - degummed orange 4 sliced garlic cloves 10 leaves - mint 0.5 dl - extra virgin olive oil 1 dl - white wine qb traditional sea salt qb pepper mill Apply coarse salt to the meat and set aside for 2 hours. After this time, rinse the meat and place it submerged in milk for 1 hour. With a mixer, beat the garlic, bay leaf, black pepper and olive oil. Remove the meat from the milk, spread with Dijon mustard and the previous mixture. Place the meat on a rack and bake at 220°C for about 12 minutes (rare) or 18 minutes (medium rare). For the jelly, prepare a base in olive oil, add the garlic and previously cooked and peeled beetroot. Let it cook and add the white wine. When the liquid has completely evaporated, add the orange and let it cook for about 4 minutes. Grind the mixture together with the mint. Adjust the seasonings and stir until you get a homogeneous texture. On a plate, place a mixture of leaves, a little of the jelly and the roast beef over the jelly.
