In this episode we prepare an unlikely but delicious recipe. Recipe: Fresh swordfish with passion fruit marinade and cornbread crumbs Swordfish: 1 kg - swordfish fillet 50 g - traditional sea salt to taste extra virgin olive oil Onion 200 g - sliced onion 3 cloves of sliced garlic 1 leaf - bay leaf 0.5 dl - extra virgin olive oil 1.5 dl - passion fruit pulp qb parsley leaves qb traditional sea salt qb ground pepper Cornbread flour 200 g - toasted crumbled cornbread qb Lemon thyme 0.3 dl - extra virgin olive oil Swordfish: Heat a frying pan with olive oil, when it is hot add the swordfish loins. Season with salt and seal all sides of the swordfish, creating a small crust. Onion: Put a little olive oil in a pan and add the onion, garlic and bay leaf. Add salt, pepper and let it sauté a little. Refresh with the wine and cover the pan to cook slowly. Add the passion fruit pulp and let it cook a little more. Adjust the seasoning and scent with the parsley leaves. Cornbread farofa: Remove the skin from a cornbread and cut into small pieces, grind everything in a food processor until it reaches the consistency of farofa. In a frying pan, heat a little olive oil, add the lemon thyme and crushed cornbread. Cut the piece of swordfish into slices, place on a plate and top with the passion fruit marinade and cornbread crumbs.
