In this episode we prepare a very Portuguese and delicious recipe. Recipe: Baked cod with garlic cream and almonds Cod: 10 – soaked cod loins 6 sliced garlic cloves 1 leaf - bay leaf 5 bay leaves - allspice 2 dl - extra virgin olive oil Garnish: 2 units - xuxu in segments 2 units - medium turnip in segments 2 units - carrot 10 leaves - blanched Portuguese cabbage qb traditional sea salt Cream: 100 g - garlic in halves 50 g - peeled almonds 3 dl - cod broth qb freshly ground pepper qb nutmeg 1 dl - olive oil extra virgin Cod Stock: 500 g - cod shavings 100 g - onion 30 g - garlic 3 g - peppercorns Parsley stalks 1.5 l - water Broth: Place the cod shavings in a pan with parsley stalks, bay leaves, peppercorns, onion and garlic. Cover with water and let it boil. Lower the heat and let it simmer. Strain and reserve the broth. Cod: Cut the cod fillets in half, remove the central bone and reserve it for broth. In a baking dish, place the cod fillets with the garlic, bay leaf, allspice and sweet extra virgin olive oil. Cover with aluminum foil and place in a preheated oven at 150 ºC for approximately 20 minutes. Cream: Place the broth in a pan with the raw almonds, garlic, nutmeg, salt and freshly ground pepper. Cook with the pan covered over low heat. Emulsify the preparation in a blender with the olive oil. Vegetables: Blanch the vegetables separately in boiling water and set aside. When serving, heat some of the cod broth in a pan to heat the vegetables. Arrange the vegetables in order of hardness. The carrot, the savoy cabbage, the xuxu and the turnip. Season with a little traditional sea salt and cover the pan. Let it heat over low heat. On a plate, arrange the almond sauce, vegetables and cod fillet.
