Recipe: Swordfish fillets with corn and tomato compote Fillets: 2 kg - swordfish fillets qb sea salt qb pepper 3 dl - lemon juice 400 g - corn flour 0.5 l – peanut oil Corn: 1 kg - corn flour 5 dl - vegetable broth 4 tablespoons - butter 60 g - dried tomatoes qb sea salt qb virgin olive oil Tomato jam: 700 g - tomato segments 20 g - minced garlic 0.5 dl - virgin olive oil as much as sea salt as much as freshly ground pepper Corn Place the vegetable broth in a pan and, using a whisk, slowly add the corn semolina. Once you have diluted all the semolina in the broth, continue stirring and cook over low heat. Add the sun-dried tomato and butter, stirring constantly. Cook for approximately 20 minutes, stirring constantly so that the corn does not stick to the bottom of the pan. Remove from heat and let cool on a plate greased with olive oil. Let it rest in the fridge, ideally for 24 hours. When it is very cold, cut into squares and fry in hot oil until golden brown. Compote Arrange the tomato on a baking tray and bake in a preheated oven at 150°C for 40 minutes. Place a little olive oil, garlic, bay leaves in a pan and cool with white wine. Bring to a boil and add the roasted tomato. Cook slowly until there is no water left and finally add the oregano. Fillets Season the fillets with sea salt, ground pepper and lemon juice. Dry the fillets and coat them in cornmeal. Fry in oil and place them on absorbent paper.
