In this episode we prepare a beautiful fish from our coast: sea bass. Recipe: Sea bass stew with new potatoes 2 kg Sea bass (clean) 1L Water 150 g Traditional sea salt 1 dl Extra virgin olive oil Base: 100 g Whole bacon 30 g Sliced garlic 250 g Minced onion 300 g Peeled tomato in segments 300 g Pepper peeled red laminated 2 dl White wine 2 dl Fish broth 0.5 dl Extra virgin olive oil 1 Bay leaf qb Freshly ground pepper qb Traditional sea salt Garnish: 1.5 kg Small potatoes qb Chopped parsley qb Extra virgin olive oil qb Traditional sea salt Preparation : Clean the fish, removing the fillets for the stew and the bones for the broth. Cut the loins into pieces. To make the fish broth, use the fish bones. In a pan, place the onion, garlic, parsley sprigs, bay leaves, white wine, water and the washed fish bones. Bring the broth to a boil and then reduce the heat and simmer for approximately 1 hour. Strain and reserve the broth. In a pan, place the bacon to melt in olive oil. Add the onion, garlic, pepper, bay leaves and mix everything. Add a little salt to break down the vegetables. Refresh with white wine, let it boil to evaporate the alcohol and add the fish broth. Add the tomato, bring to a boil again and cook for a few minutes with the pan covered. Then place the fish slices skin side up, the parsley sprigs on top and cover the pan again. Cook for a few minutes, adjust the salt and add the ground pepper. Season the potato with salt, olive oil, bay leaf and pepper. Bake in a preheated oven at 180 °C with silver paper, for approximately 45 minutes. If you prefer, remove the skin.
