Recipe Couscous salad with raisins, apricots, Ilha cheese shavings and arugula. 650 g - couscous pasta 150 g - raisins 150 g - sliced apricots 200 g - thinly sliced island cheese 100 g - juliana ham 1 tbsp. soup chopped ginger 30 g - chopped dried tomato 1.5 dl - extra virgin olive oil 0.3 dl - white wine vinegar qb fleur de sel qb pepper 2 tbsp. basil soup 300 g - arugula In a pan, bring the vegetable broth to a boil, add salt and cook the couscous for the time indicated on the package. When the couscous is cooked, remove from the heat, strain and set the couscous aside. In a bowl place the chopped ginger, the cheese cut into thin slices and split in half. Add the couscous, sun-dried tomatoes, apricots, previously hydrated raisins, basil leaves, ham, vinegar, arugula and olive oil. Adjust the salt and pepper.
