In this episode we will discover one of the tastiest ways to cook rabbit meat. Recipe: Rabbit rice with lemon thyme and spinach Rice: 2 kg Rabbit in pieces 800 g Carolino rice 5 cloves Sliced garlic 150 g Chopped onion 200 g Tomatoes, skinless and seedless 50 g Bacon cubes 1.5 lt Vegetable broth 1 dl Extra virgin olive oil 2 dl Red wine 0.5 dl Lemon juice 1 leaf Bay leaves 2 stems Lemon thyme qb Traditional sea salt qb Freshly ground pepper Garnish: Rabbit offal 300 g Leaf spinach 2 tbsp. soup Chopped parsley qb Red wine vinegar qb Thyme qb Traditional sea salt Ground pepper Season the rabbit with salt, ground pepper, thyme, lemon juice and leave to marinate for 2 hours. Season the offal and the crumb with salt and pepper. Book. Brown the bacon in olive oil and sear the rabbit, when it is golden, add the onion, garlic, bay leaf and thyme. Mix everything together, soak with red wine and add tomato juice. Let it braise. Add the broth, let the rabbit cook. When it is soft, add the tomato and vegetable broth. Bring to a boil and add the rice. Before finishing cooking the grain, add the rabbit giblets, spinach leaves and chopped parsley.
