In this episode we will prepare a special oven-baked mackerel recipe with roasted tomatoes. Recipe: Baked mackerel with roasted tomatoes and basil. Fish: 1.5 kg - mackerel 350 g - sliced onion 2 dl - white wine 0.5 dl - white wine vinegar 6 minced garlic cloves 1 bay leaf as much chilli as traditional sea salt Garnish: 10 roasted tomato halves 10 wheat bread toasts 1 dl - extra virgin olive oil 0.5 dl - fig vinegar qb - basil Clean the mackerel from the viscera, remove the loins and place the fish in a mixture of water, ice and salt for 10 minutes . Drain, dry with absorbent paper and set aside. In an oven-safe frying pan, add olive oil and make a bed with onion, garlic, bay leaves, finger pepper, white wine, white wine vinegar and salt. Place the frying pan in the preheated oven at 200°C until the onion is lightly browned. Remove the pan from the oven, place the freckles skin side down, add the pre-roasted tomatoes and return to the oven for 8 minutes. Remove from the oven again, reserve the fish and roasted tomatoes and blend the other ingredients with a mixer. Arrange the toast on the plate, the roasted tomato and the mackerel.
