Tie the sausage tape and lower it into hot water at 85-90 degrees. When the sausages get into the water, they will lower the temperature of the water. Continue cooking the sausages in water at 80 degrees (keep it at minimum heat on the stove or add boiling water to the container) until the mince inside the sausage reaches 70 degrees.
