In a pan, add the olive oil and heat for 3 minutes. Add the chicken to the pan and sear the chicken pieces. Remove the chicken from the pan and set aside. Add the grated carrots, onions, and leeks to the same pan and sauté well. Return the chicken to the pan and add water until the chicken is completely covered. Let it cook for 40 minutes. In another pan, add water and the peeled and chopped yam. Cook for 15 minutes. After the chicken has cooked for 40 minutes, remove the chicken from the pan and wait for it to cool before shredding it. After the yam is cooked, drain it, discarding all the water, and place the yam in the pan where the chicken was cooked. Mash it in the pan and, together with the cream cheese and mozzarella, mix everything until smooth. Use a blender if necessary. Return the shredded chicken to the pan. Preheat the oven to high temperature. Place the yam and chicken mixture in a baking dish and bake for 20 minutes to brown.
