Ingredients Recipe 250 + 130 ml of soy milk 70 g of chickpea flour 5 g of salt 1 tablespoon of pickled green pepper 1 tablespoon of extra virgin olive oil 5 g of chia seeds Preparation Creamy Veg-Cheese with Chickpeas 1. Pour 250 ml of soy milk into a saucepan and heat gently. 2. In the meantime, dissolve the chickpea flour in 130 ml of soy milk, mixing with a whisk until you obtain a thick, smooth and lump-free batter. 3. When the milk in the saucepan is hot, add the chickpea batter, salt, oil and green pepper: when the mixture begins to thicken, change the ladle and use a wooden spoon. 4. Cook the mixture for another minute, taking care to maintain a low flame. 5. Turn off the heat and pour the chickpea cream into a ricotta mould or another perforated mould. The right idea To lighten the veg-cheese, you can replace the soy milk with simple water, creating a sort of solid "panella". The mould is available in kitchenware shops but can be replaced with a simple cup. 6. Leave to cool until it solidifies. 7. Unmold the chickpea veg-cheese and cover the surface with chia seeds.
