Ingredients Recipe For 20-25 croquettes Steamed food: 400 g spinach 60 g (1 medium) eggs 50 g grated parmesan cheese Cooked food: 150 g potatoes Salt to taste Pepper to taste 70-100 g stringy cheese or mozzarella To cover and cook 80 g corn flakes 3 tablespoons extra virgin olive oil Preparation Stringy Spinach Croquettes 1. Wash the potatoes, peel them, cut them into cubes and cook them in boiling water until soft (10-15 minutes, depending on the size of the pieces). 2. Wash the spinach, spin them to dry them and steam them until wilted (about 5 minutes). Remove the spinach, let it cool, squeeze and chop roughly with a knife. The right advice In this recipe we will use about 150 g of boiled potatoes: the quantity is modest, so we recommend cooking a larger dose if necessary, but using only 150 g (cooked weight) for this recipe. The leftover potatoes can be used to prepare other recipes, such as baked potatoes or mashed potatoes. Those who do not want to use potatoes can prefer potato flakes, which are much more practical. It is also recommended to chop the spinach with a knife, and not blend it to avoid forming a cream. 3. Mash the potatoes to obtain a puree. 4. Collect the chopped spinach in a bowl, season with salt and pepper. Season with grated Parmesan and mix with an egg and the mashed potatoes. 5. Wait about ten minutes for the mixture to firm up. 6. Now, proceed with shaping the croquettes. Take a spoonful of creamed spinach, add a piece of stretched curd cheese (e.g. Asiago, Fontina, Mozzarella, etc.) to the center and shape with your hands until you obtain an elongated cylindrical shape. 7. Roll each croquette in chopped corn flakes. 8. Place the croquettes on a baking tray lined with baking paper. Drizzle the spinach croquettes with a drizzle of oil, then bake in the oven at 200°C (fan assisted) for about 20 minutes or until golden brown. It is advisable to turn the croquettes halfway through cooking, to obtain uniform crispiness. 9.
