Ingredients Recipe 150 g chickpea flour 300 ml water 250 g champignon or honey mushrooms or pioppini To taste parsley 4 g salt To taste pepper 1 + 2 tablespoons extra virgin olive oil Preparation Baked Mushroom Omelette 1. Wash the mushrooms, cut them into slices and sauté them in a pan adding a pinch of salt, pepper and a tablespoon of oil. Cook the mushrooms for about ten minutes, stirring often. Sauté the mushrooms adding parsley. 2. Preheat the oven to 200°C (fan assisted). 3. In the meantime, prepare the chickpea batter. In a bowl, sift the chickpea flour, add the water, 4 g salt, pepper and two tablespoons extra virgin olive oil. 4. Add the sautéed mushrooms to the chickpea batter. 5. Line a rectangular baking tray (20 x 30 cm) with baking paper, then pour in the mixture and level it. 6. Bake at 200°C (fan assisted) for 25 minutes or until golden brown. The quick idea As an alternative to the oven, the far-frittata can be cooked in a pan: in 10 minutes on a medium-low flame it will be ready! 7. Remove from the oven, let cool and cut into slices.
