Put the garlic and shallots in a food processor, puree 2. Heat the oil, saute the garlic and shallots until slightly brown 3. Mix the water with the rice flour, stir well then put in a frying pan 4. Add salt, flavoring, chicken stock powder, sugar and pepper, cook until thick and cooked then transfer into a bowl 5. For the peanut sauce, put the garlic, shallots, candlenuts, peanuts, curly red chilies and red cayenne peppers into a food processor, puree 6. Heat the oil, saute the peanut sauce until fragrant and foamy then add water, brown sugar, sweet soy sauce, lime leaves, salt and mushroom stock, cook until the water is reduced by half 7. Set aside the lime leaves and blend some of the peanut sauce. Cook again then add the tapioca solution, cook until boiling and thickened 8. After the starter mixture has cooled, add the eggs, soy sauce, flour and tapioca, stir until evenly mixed 9. Chop the spring onions and mix into the mixture, stir evenly. Form the dough into balls then boil until it floats and is cooked, drain and add a little oil 10. Skewer the meatballs with skewers then fry until dry, drain 11. The meatballs are ready to be served =================== [ENGLISH] Meatballs Recipe (yield 70-80 pieces) Starter ingredients: 5 clove garlic 5 pc shallot 50 ml oil 350 ml water 120 g rice flour 1 tsp salt ¼ tsp pepper 1 tbsp chicken powder 1 tsp MSG 1 tbsp sugar 3 tbsp soy sauce 2-3 pc green onion Dough ingredients: 1 pc egg 250 g tapioca flour 50 g all-purpose flour Peanut Sauce ingredients: 4 pc shallot 2 clove garlic 1 pc candlenut 4 tbsp oil 50 g fried peanut 2 pc red Thai chili (optional) 3 pc curly red chili 2 pc kaffir lime leaf 500 ml water 1.5 tbsp sweet soy sauce 1 tsp mushroom bouillon 1 tsp salt 1.5 tbsp palm sugar 1.5 tbsp tapioca flour Add-ons: Lime Steps: 1. Place garlic and shallots into a food processor. Blend until smooth. 2. Heat oil. Sauté garlic and shallots until lightly browned. 3. Mix water with rice flour, then add to the pan. 4. Add salt, seasoning, chicken powder, sugar, and pepper. Cook until thickened and cooked through, then transfer to a bowl. 5. For the Peanut Sauce, place garlic, shallots, candlenuts, peanuts, curly red chilies, and red Thai chilies into a food processor. Blend until smooth. 6. Heat oil. Sauté the mixture until fragrant and foamy, then add water, palm sugar, sweet soy sauce, kaffir lime leaves, salt, and mushroom bouillon. Cook until the water reduces by half. 7. Set the kaffir lime leaves aside. Blend part of the Peanut Sauce until smooth. Cook again, then add the tapioca slurry. Cook until boiling and thickened. 8. Once the starter mixture is cool, add egg, soy sauce, all-purpose flour, and tapioca flour. Mix well. 9. Chop green onions and mix them into the dough. Mix well. Shape the dough into balls, then boil until they float and are cooked through. Drain and add a bit of oil. 10. Skewer the balls with satay sticks and fry until crisp, then drain. 11.
