Recipes: Shaggy pie with walnuts and jam called Chupava Kata - Aunt Milena Here is a fine old-fashioned shortbread pie, jam made of apricots or plums and walnuts, and a shaggy layer of shortcrust pastry on top that makes the pie decorative and crunchy - Shaggy pie called Chupava Kata . The ingredients are affordable and we usually always have them at home, and the cake, despite its simplicity, is somewhat festive and suitable as a serving for gatherings because it can stand for a long time at room temperature. The longer it stands, the softer and crumblier it becomes, and the more beautiful it becomes. Ingredients (mold dimensions: 36×24 cm) For the dough: 300 g of fat 150 g of sugar 4 egg yolks of milk, enough to knead, not hard (about 1 dl) 400 g of flour 1 baking powder For the filling: 4 egg whites 100 g of sugar 200 g of ground walnuts or grapes 1-2 vanilla sugar 5-6 tablespoons of apricot or plum jam Preparation In a bowl mix the fat, sugar, baking powder and flour, then make small crumbs with your fingers (crush the flour and fat). Add egg yolk and milk and knead a fine, compact dough by hand, but not hard. Divide the dough into 2 parts so that one part is bigger. Leave it to rest for about 10 minutes, then unroll it and put it in a pan to bake. Bake at 180 degrees without fan for 10 minutes. During this time, prepare the filling. Wrap the second part of the dough in self-adhesive foil and put it in the refrigerator. That piece of dough is grated on top of the pie. Filling: Beat egg whites with sugar and vanilla sugar. Beat until you get stiff and shiny snow and until all the sugar has dissolved. Then add the ground walnuts and combine everything by hand with a spatula, slowly mixing. Set aside until ready to use. (option + gradually add jam, walnuts and vanilla sugar). Spread the jam over the half-baked dough, add the beaten egg whites and briefly grate the rest of the dough on top, adding a little more flour. Place the pie in a preheated oven at 180 degrees to bake for about 20-30 minutes until golden. Sprinkle the cooled pie with powdered sugar and cut into rhombuses or cubes. Shortbread Blueberry Pie Sweet blueberries covered with shortbread crumbs are a nice and refreshing summer treat. The dough is quick and easy to make and you get a buttery dough that melts in your mouth. Ingredients: Crust: 250 g flour 1 tablespoon sugar 1/2 teaspoon salt 100 g cold butter cut into 1 cm cubes 5 tablespoons ice water Blueberry filling: 150 g sugar 2 ½ tablespoons starch 1 teaspoon lemon zest (about 1 lemon) 2 spoons of lemon juice 600 g fresh blueberries, washed and dried ½ small apple, peeled and grated - optional For the crumbs on top (crumble): 85 g of flour 70 g of light brown sugar 70 g of cold butter, cut into cubes 1 tablespoon of sugar Preparation: Crust: Using your fingertips, carefully and quickly mix the flour, sugar, salt and butter to make crumbs. Add water and knead the dough. Wrap it in self-adhesive foil and put it in the fridge for 2 hours. Put the pan with parchment paper in the oven and heat it together with the oven to 190 degrees without fan. Roll out the pie dough with a rolling pin and transfer it to the pie mold. Prick the bottom, put baking paper, fill the dough shell with beans or rice and bake without filling for about 20 minutes. Remove the paper and the beans (rice) and bake for another 10 minutes until nicely browned. Remove from the oven and leave to cool while preparing the filling. Filling: Mix sugar, lemon zest and starch. Put the blueberries in a bowl, mix them with the apple and pour over the lemon juice. Add the combination of sugar and starch, mix carefully and let it stand for 30 minutes. Crumbs (crumble): Use your fingertips to make crumbs from all the ingredients or put them in a chopper for him to do it. Place in the refrigerator until use. Assembling the pie: Heat the oven to 190 degrees. Pour the blueberry filling into the baked pie crust. Spread all the crumbs on top. Bake in a heated oven for about 1 hour. After 30 minutes, cover with baking paper to prevent the dough from overbaking. When the crumbs are golden brown and the blueberries start to boil on the sides and ooze a little, remove the pie from the oven and cool to room temperature. Serve the pie with a scoop of ice cream or whipped cream.
