Meanwhile, peel the onions. Cut an onion, stud it with a bay leaf and clove and put it in a saucepan with the stock. Finely dice the other onion. Heat 2 tablespoons of butter in a pan and sauté the onion cubes until translucent. Finely chop 2 tablespoons of capers, parsley and anchovy fillet. Squeeze the water out of the rolls and put them in a bowl with the minced meat, mustard, egg, sautéed onion cubes, chopped capers, ¾ of the parsley and anchovy. Season with salt and pepper and mix all the ingredients well with a wooden spoon. Form the minced meat mixture into eight even-sized meatballs. Bring the stock to the boil, season with salt and vinegar and leave the meatballs to cook in it over a medium heat for around 10 minutes. Then remove the pan with the meatballs from the heat and set aside. Measure out 400 ml of meat stock and leave to cool for around 15 minutes. Melt 3 tablespoons of butter in another pan. Sweat the flour in it over a medium heat for around 2 minutes until light. Gradually pour in the measured stock, stirring constantly, and bring to the boil. Simmer the sauce uncovered over a low heat, stirring occasionally, for around 10 minutes. Then add the cream and 2 tablespoons of capers to the sauce. Bring the sauce to the boil again and season with salt, pepper and lemon juice. Heat the meatballs again in the remaining stock, remove from the stock, serve and pour the sauce over them.
