All vegetables are cut into thin slices and then dried on a drying tray in a dehydrator at 60 degrees for approx. 12-15 hours. If you want the vegetable powder in raw vegan quality, the drying temperature is a maximum of 45 degrees and the drying time is around 20 hours. However, if you mainly use the vegetable powder to season hot dishes, you can dry it at a higher temperature with a clear conscience. The herbs are put whole in the oven for around 15 minutes at 150 degrees. For hard herbs (such as rosemary, thyme and sage), only the leaves are used and plucked from the stems after drying. When all the vegetables and herbs are very well dried, they are put through a food processor and ground separately. Then the individual vegetable powders are put into a bowl according to taste and mixed together. For a faster drying time, all vegetables can also be put in a blender and then spread thinly as a "smoothie" on the dehydrator foil and then dried in the dehydrator. The resulting fruit leather is then also ground into powder in the food processor. For good preservation of the vegetable powder, it is very important that the vegetables (powder) are completely dry, otherwise there is a risk of mold forming. You can also dry the finished vegetable mixture again in the oven or dehydrator without any problem. The lack of drying is usually noticeable when chopping in the food processor, i.e. if the vegetables clump and stick together, this is a sign that they need to be dried again. Add a little salt to both mixtures to season. For the Mediterranean vegetable mixture, add a little stevia as a sweetener for a nice, rounded aroma. The vegetable powders look so pretty and are also wonderful to give as gifts. You can make mixtures from the individual vegetable components, but you can also fill powder from individual vegetable powders. You can also use this to season and decorate the dishes wonderfully.
