Aubrac, a land in the open sky with its wide open spaces and unique atmosphere. But you can't claim to know Aubrac completely if you haven't been there in winter. The landscapes change completely in appearance but one thing doesn't change: they are still just as captivating. The territory itself is not that big, a triangle of 40 km by 20, but it has such a strong personality that from the first steps, you feel like you're in a world of your own... somewhere else.... It's with Gonzalo Diaz who has been accompanying hikers for over 30 years that we set off on our hike. Walking with him is the assurance of being surprised at every step. With an average altitude of 1200 meters, we are certainly far from the Pyrenean or Alpine peaks and yet Aubrac has 4 ski resorts: Nasbinals, Brameloup, Laguiole and Sainte Urcize. Winter on the plateau is a special season for everyone. Especially the breeders. At this time of year, you have to go to the stables to find the Aubrac cows where they are nice and warm. Here we are at the Lhon farm near Laguiole. Caroline and André raise a herd of 100 suckler cows here... and the birthing season has begun. The Aubrac inspires artists, creators, of all kinds, including those who invent culinary emotions... Like Sébastien Bras, a three-star chef. Winter is a special time for him, as his restaurant is closed he can enjoy his country and indulge in cross-country skiing.
