Season 400g minced pork, 1 tbsp anchovy sauce, 2 tbsp sesame oil, pepper, 2 tbsp cooking wine, ½ tbsp minced garlic, and 1/3 tsp minced ginger. 2. Cut 900g of tofu into large squares and mash 300g. 3. Cut the center of the sliced tofu into a square. 4. Sprinkle salt on the tofu and season. 5. Put the mashed tofu in a cheesecloth and squeeze out any moisture. 6. Shape the shiitake mushrooms on top. 7. Add the remaining pieces to the meat filling. 8. Slice the zucchini and scoop out the center. 9. Chop the remaining pieces slightly and add to the meat filling. 10. Chop the onion, carrot, green onion, and pepper and add to the meat filling. 11. Mix only 1 egg into the meat filling. 12. Put the zucchini in a bag, add 1 spoon of pancake mix, and shake to coat. 13. Mix 1 spoon of soy sauce and 1 spoon of sesame oil and coat the inside of the shiitake mushrooms. 14. Coat only the inside of the shiitake mushrooms with the tempura flour. 15. Crack 6 eggs. 16. Put a small amount of meat filling on the inside of the shiitake mushrooms. 17. Put the meat filling inside the zucchini as well. 18. Sprinkle only the meat filling of the shiitake mushrooms with the tempura flour. 19. Coat both sides of the zucchini with the tempura flour. 20. Coat the pan with cooking oil and coat both sides of the zucchini with the egg and fry until golden brown. 21. Coat only the pork filling side of the shiitake mushrooms with the egg and fry. 22.
