The recipe for its preparation appeared when one of the local housewives came up with the idea of ​​coating the heads of cheese with wine to save this product from annoying insects. After some time, the cheese absorbed the entire wine bouquet and became very aromatic. Then it was decided to leave the cheese heads in wine for at least one year. Exactly 12 months later, the original, exquisite and very tasty cheese "Queso al vino de Murcia" was born. Nowadays, during the maturation process, the cheese is immersed in red wine twice, each time for 45 days (for large pieces) and 30 days (for small ones), due to which the crust acquires a reddish-brown color, and the taste - a strong floral bouquet, well, and there is no need to talk about the aroma. Wine cheese is produced in 3 different formats weighing from 400 g to 2 kg: the heads have a smooth, cylindrical shape, without any pattern, with diameters from 12 to 15 cm. The texture of the cheese is quite soft, elastic and creamy, creamy in color, with rare holes. The cheese just melts in your mouth, because it has a high fat content of 56%. "Cheese of Murcia al Vino" is usually eaten with sweet fruits, with hard bread or crackers. It is often added to salads. It goes well with wines of La Rioja, Ribera del Duer and other sweet Spanish wines.
