Cheesecake without using the oven Cheesecake base Ingredients 400 gr Sweet cookies 120 gr Butter/Unsalted butter Step by step 1. Prepare a 20cm diameter x 7cm high mold. 2. Process the cookies until it becomes a fine grain. It is important that the cookies are well processed. 3. Add the melted butter. Process until it becomes a moist grain. 4. Place the preparation in the mold and compact it well against the base and sides of the mold. 5. Reserve in the freezer for 30-40 minutes. Filling Ingredients 770 g Cream cheese 50 g Condensed milk 1 unit Lemon zest 3 tbsp Lemon juice (½ unit / 30 cc) 60 g Plain white sugar 1 tsp Vanilla essence 160 cc Heavy cream 30 g Icing sugar OPTIONAL (if your filling didn't hold together) 10 g Gelatin 50 cc Water Step by step 1. Place the cream cheese in a bowl and beat it with an electric mixer to make sure it's creamy. 2. Add the condensed milk and mix with the electric mixer. 3. Add the lemon zest and juice, white sugar and vanilla essence and mix with the electric mixer. 4. Beat the cold cream with the sifted talcum sugar until it thickens. 5. Add the cream to the filling. Mix. 6. OPTIONAL (if your filling didn't hold together): hydrate the gelatin in the water. Mix in. Microwave for a few seconds to activate it. Equalize densities by adding a little of the filling to the gelatin and then add to the preparation. 7. Place the filling in the mold with the base just taken out of the freezer. 8. Wrap with film and refrigerate for 24 hours. Strawberry Compote Ingredients 400 g fresh strawberries (frozen fruit can also be used) 60 g white sugar a few drops/1 tbsp lemon juice Step by step 1. Wash the strawberries, remove the stems and cut them. Separate 3 strawberries for decoration. 2. Place the strawberries in a saucepan and cook on low heat for about 8 to 10 minutes until the fruit dehydrates a little. Mash them a little so they disintegrate. If the fruit is frozen, let it defrost a little first before putting it on the heat. 3. Add the sugar and lemon juice and cook over low heat. Stir occasionally. 4. Place in a container. Let cool to room temperature and store in the refrigerator. Ideally, do this the day before. Assembly Step by step 1. Before unmolding, place the cheesecake in the freezer for 40 minutes to help it unmold. 2. Place a dot of compote on the cake stand so that the cheesecake does not move. 3. Unmold the cheesecake and place it on the cake stand. 4. Place the compote on top. 5. Decorate with the 3 strawberries.
