INGREDIENTS: FOR THE DOUGH: 3 cups all-purpose or strong wheat flour = 420g 10g granulated dry baker's yeast = 1 tablespoon or 30g fresh baker's yeast 150ml warm milk = 12 tablespoons = ½ cup + 2 tablespoons and a little more if necessary ½ cup sugar = 110g = 6 tablespoons 1 Egg 3 tablespoons soft unsalted butter = 60g 1 teaspoon vanilla essence ½ teaspoon salt FOR THE FILLING: 3 tablespoons soft salted butter = 60g 3 tablespoons ground cinnamon = 40g 6 tablespoons light muscovado sugar or brown sugar = 120g 1 beaten egg to brush the rolls before going into the oven FOR THE COVERING: 6 tablespoons cream cheese = 180g 1 heaping tablespoon unsalted butter = 25gr 6 tablespoons of icing sugar = 84gr 1 teaspoon of vanilla essence PREPARATION: Place the warm milk, yeast, 1 tablespoon of sugar and 1 tablespoon of flour in a bowl, stir, cover and store in a warm place without drafts for 15 minutes to rise. In a large bowl put the flour with the sugar mix well, make a hole in the center and add the egg and butter, add the activated yeast and start kneading, add the half teaspoon of salt knead a little more, remove the dough from the bowl and on a kneading board or a table or flat, floured surface place the dough and knead vigorously for 10 minutes. In a floured bowl place the dough, cover with a cloth and store for 1 hour in a warm, draft-free place for the dough to rise and double in size. Mix the brown sugar with the cinnamon, set aside. Using a rolling pin, roll out the dough on a floured surface and make a rectangle out of the dough. Spread the dough with the soft butter, spread the cinnamon-sugar mixture evenly over the butter. Roll horizontally into a tight roll. Cut into circles of approximately 4cm, which are about 2 fingers wide. Place them on a baking sheet lined with greaseproof paper or greased, store them and let them rise for an hour in a warm place. Prepare the topping by mixing the cream cheese, butter, icing sugar and vanilla essence and mix well until it forms a thick cream. Set aside. Brush the rolls with the beaten egg and bake for 25 or 30 minutes depending on the oven at 180ºC.
