A panettone-flavored cake so easy to make that you won't believe it, it will be incredible, I assure you that you will always make it for Christmas, it is fantastic and irresistible, follow this recipe that you will love. INGREDIENTS: .- 3 cups all-purpose flour = 420gr = 21 tablespoons .- 2 eggs .- 1 cup sugar = 220gr = 12 tablespoons .- ½ cup warm milk = 125ml = 10 tablespoons .- ½ cup oil = 125ml = 10 tablespoons .- ½ teaspoon salt .- Zest of ½ orange or 1 lemon .- 1 tablespoon panettone, orange or vanilla essence .- 2 tablespoons baking powder .- 200gr candied fruit + 80gr raisins or 300gr chocolate chips .- 1 20cm diameter mold greased and floured INGREDIENTS FOR THE GLAZE AND DECORATION: • 180gr icing sugar = 10 tablespoons • milk as needed • Candied fruit and cherries to decorate PREPARATION: Mix the fruit with the raisins and coat in a few tablespoons of flour (this way they won’t sink to the bottom when you add them to the dough). Set aside. Sift the flour, mix with the baking powder and salt, and set aside. Preheat the oven to 180ºC to heat up. Place the warm milk in a blender, add the sugar, oil, eggs and essence and blend well for about 2 minutes. In a large bowl, place the flour, open a hole in the center and add the mixture that we made in the blender, add the orange or lemon zest and begin to mix so that it is integrated into the flour (you cannot add the flour to the blender because it can burn, it is not necessary). Mix for 2 or 3 minutes with a wooden spoon insistently so that a homogeneous dough remains (the dough is not very soft). Now strain the fruit to remove the excess flour and add the fruit to the dough, mix just a little so that the fruit is integrated into the dough. Place the dough in the greased and floured mold and bake at 180ºc for approximately 40 minutes or until when you prick it with a toothpick it comes out dry. When the time has passed and it is golden, remove from the oven, let cool and unmold. Preparing the icing to cover the cakes: Place the sugar in a bowl and add the milk spoon by spoon and mix until it reaches the right thickness, when it is very thick but creamy it will be at the right point. We begin to drizzle over the fruit cake and finish decorating with the candied fruits that we had reserved, let it cool and that's it.
