The Billis first prepare the ravioli dough: in a bowl they mix the flour and eggs until they form a smooth dough that they leave to rest in the fridge for two hours. In the meantime they dedicate themselves to the filling by dividing the ricotta and grated cheese into three bowls. In one bowl they add the taleggio, in another the brie and in the last the gorgonzola. They flavour all three fillings with nutmeg, white pepper, salt and mix well. They transfer the three fillings into three different piping bags. When the dough has rested, they roll it out to form a sheet that is not too thin and fill half of it with the three different fillings. They close it with the other half, press to form a checkerboard and finally make the ravioli with a wheel. After cooking it in salted water, they stir it in a pan with butter, sage, honey, breadcrumbs and grated cheese. They are served brushed with honey. Ingredients for the ravioli: 500 g of 00 flour 5 eggs For the filling: 150 g of taleggio 150 g of gorgonzola 150 g of brie 450 g of ricotta 250 g of grated cheese nutmeg salt and white pepper For the dressing: 200 g of butter 100 g of breadcrumbs 50 g of grated cheese 100 g of honey sage
