Ricotta Gnocchi with Pumpkin ■ The things I use. my socials, my contacts My Book, You can find them here https://rapanelloelasuacucina.blogspo... ________________________________ Ricotta Gnocchi Everyone likes gnocchi and everyone wants them, which is why over the years many recipes have been created to make them. From potato gnocchi, the quintessential gnocchi, to rice gnocchi, pumpkin gnocchi, semolina gnocchi, and even ricotta gnocchi. Ricotta gnocchi are different from the others for their versatility in being seasoned with any seasoning, so let's make them. They are really easy and fun. Ingredients for 4 people Dry ricotta 500 g Flour 250 g Egg 1 Parmesan 2 tablespoons parsley, nutmeg, salt Pumpkin cream dressing For 4 people Oil 2 tablespoons Onion one small Potato one small Pumpkin cleaned 500 g Salt and pepper Rosemary In a large bowl put the ricotta, egg, salt, Parmesan, parsley and nutmeg to taste. Mix well Add the flour in two times. If the dough is not firm enough to be impossible to shape, add another 50 g of flour. Knead well and make a ball that must be smooth and not very sticky. Move it onto a floured table, flatten the ball with your hands as if it were a pizza with a thickness of one and a half centimeters, and flour the top too. Cut into 2 centimeter wide strips and roll them up with your hands as if they were cigars. Cut these cigars into 1 centimeter long pieces, so as to obtain gnocchi. Using your hands, round the gnocchi one by one and place them on a large floured baking sheet. Put a large pot of salted water on the stove to cook the gnocchi. While the water is heating, prepare the sauce. You can season these gnocchi with simple butter and sage, or with tomato sauce, or with something more special like we are doing today, a pumpkin cream. In a large pan, add two rounds of oil, and add the chopped onion. Add a small peeled and thinly sliced potato. Add the thinly sliced pumpkin. Brown everything together for 4 minutes and then add a ladle of water to cook. Salt and pepper. Put a lid on and let cook for 10 minutes. After 10 minutes you have to grind the sage to make it creamy, you can use a blender or a vegetable mill. When the water boils, add the gnocchi, immediately give them just a little mix without squashing them, and in two minutes they will come to the surface, cooked. You fish them out with a slotted spoon and put them in the creamy pumpkin sauce, add a sprig of fresh rosemary. A mix, if they seem dry add half a ladle of cooking water. And here is a very easy dish that will make everyone happy. Hurray. Chef's tips Always remember to cook any type of gnocchi in plenty of water so that it does not cool down too much when you put the gnocchi in. This way the water will quickly regain temperature and the gnocchi will not fall apart in the water because they will cook quickly. Vegetarian, preparation time 40 minutes.
