Chicken Soup This is one of my childhood favorites. I think it's also the one that mom made most often. ???? Ingredients: • pieces of a chicken (I used the whole chicken except for the breast and thighs); • 3L water; • 2 carrots; • 1 parsnip; • 1 large onion; • 1 large potato; • 450g chopped tomatoes without skin; • salt to taste; • 1 egg; • 3 tablespoons of vinegar; • 1 generous bunch of parsley. Method of preparation: 1. I left a pot on the fire and put the water and the chicken pieces in it. I left everything on the fire and skimmed the foam as often as needed. 2. After no more foam formed in the pot, I put the chopped vegetables. I finely chopped the onion, carrots and parsnip, and cut the potato into larger pieces. 3. I let everything boil for ~20 minutes and added the tomatoes. 4. After another 10 minutes, I added salt to taste, mixed well and left on the fire for another 5 minutes. 5. I turned off the heat and, while the soup calmed down a bit, I beat an egg very well with 3 tablespoons of vinegar. 6. I then gradually put a spoonful of the soup juice over the egg, stirring continuously. 7. I transferred the obtained composition to the pot, mixing at the same time. 8.I sprinkled fresh parsley on top and that was it. Simple and good! ????
