Ingredients: 440 g water 800 g flour 40 g fresh yeast 1 pinch of sugar 1/2 teaspoon salt 40 g neutral oil Preparation: Heat water, yeast and sugar in the mixing bowl for 2 minutes 37 °C level 2. Add flour, salt and olive oil and knead for 2 minutes dough mode to form a smooth dough. Ingredients: 400 g sugar 500 g flour 200 g soft butter 220 g milk 20 g fresh yeast 1 egg 1 egg white & 1 egg yolk 200 g marzipan paste 1 pinch of salt 50 g flaked almonds Zest & juice of half a lemon 120 g poppy seeds Preparation 1. Put 200 g sugar in the mixing bowl, process for 30 seconds speed 10 to make icing sugar and then transfer to a bowl. Put 200 g milk, the yeast and 50 g sugar in the mixing bowl and heat for 2 minutes 37 °C speed 2. Add the flour, salt, another 50 g sugar, lemon zest, egg and 100 g butter and mix everything for 3 minutes In dough mode, knead into a smooth dough and then transfer to a bowl. Cover and leave to rise in a warm place for 45 minutes. Rinse the mixing bowl. 2. Meanwhile, for the filling, put the marzipan and egg white in the mixing bowl and chop for 10 seconds level 5. Push down with the spatula and repeat the process. Add the remaining butter with the remaining sugar and the poppy seeds and mix for 30 seconds level 5 until you have a homogeneous mass. 3. Roll out the dough on a floured work surface into a rectangle (45 x 30 cm) and spread the filling on it. Then roll it up lengthways. Then cut it lengthways to create two strands. Bake in a hot oven on the 2nd rack from the bottom for 45-50 minutes. Cover with aluminum foil if necessary if the surface is in danger of getting too dark. 5. Take the wreath out of the oven and leave to cool completely on a rack.
