The Ashkenazim form the largest ethno-religious group in Judaism today (around 70%). Their ancestors originally come from Russia, Poland, Lithuania, Romania and other Eastern European countries. Jews from Central European countries such as Germany, Austria, Hungary and France also belong to this group. Life in relatively cold climates gave rise to a peasant cuisine. Jewish dishes such as pastrami, matzo balls, beef brisket, babka, chopped chicken liver or gefillte fish have their roots here.
