Our Thermomix® expert Dési shows you how easy it is. 🤗 👉 Ingredients for 8 people: 6 eggs, separated Zest of 2 lemons 240 g white chocolate, in pieces 240 g cream cheese at room temperature 200 g raspberries 1️⃣ Insert the mixer attachment into the clean, grease-free mixing bowl. Put the egg whites in the mixing bowl and beat for 2 mins 37 °C level 4. Fill a bowl with the beaten egg whites and set aside. Clean and dry the mixing bowl. 2️⃣ Put the lemon zest and chocolate in the mixing bowl and chop for 10 secs level 10. Push down with the spatula. Then melt for 6 mins 45 °C level 2.5. 3️⃣ Add the cream cheese and egg yolks and mix for 20 seconds level 4. 4️⃣ Fold the beaten egg whites into the mixture with the spatula. 5️⃣ Line a springform pan with a diameter of 18 cm with baking paper and pour in the cheesecake mixture. Spread the raspberries on top. Clean the mixing bowl. 6️⃣ Pour 1250 g of water into the mixing bowl. Place the Varoma® on top with the cake and make sure that a few air slits are left free so that the steam can circulate (if all of them are covered, you can place small porcelain molds under the baking pan or put chopsticks underneath). Then steam for 60 minutes Varoma® level 2. Allow the cheesecake to cool completely in the Varoma® before serving.
