Making pasta at home should be an activity that involves the family, passing on traditions and the desire to do something together, which is why I'm very fond of recipes that call for fresh pasta. Maybe because it reminds me of my childhood where I was always in the front row when it came to turning the crank of the pasta machine. Spinach tortelli for 3 portions 100 g of flour 0 or 00 100 g of re-milled semolina (or all normal flour 200 g) 100 g of minced raw spinach 1 egg Filling 130 g dry ricotta A scant handful of raisins 10 pistachios 2 tablespoons parmesan A little chopped rosemary Optional a little breadcrumbs Salt pepper oil to taste Nutmeg Dressing 50 g smoked bacon 2 cooked potatoes 2 sage leaves You can mince the raw spinach or you can lightly sauté it in a pan, with half a glass of water and 2 tablespoons of oil for 2 minutes and then mince it and weigh it, 100 g. Put the flours in a bowl, together with the egg and spinach and mix with a fork and then knead. Work the dough for a couple of minutes, if it is sticky add 1-2 tablespoons of flour. The pasta should be dry and a little hard. Let the pasta rest for 30 minutes with the lid on so it doesn't dry out. In the meantime, prepare the filling. In a bowl, put the ricotta, raisins and roughly chopped pistachios (walnuts are also fine), a little salt and nutmeg, chopped cheese and rosemary. Mix well. If it turns out too soft, add a spoonful of bread and mix so it dries out. The spa is relaxed, don't knead it but cut it into 4 equal parts. Use 2 at a time. Press the first piece with your hands and pass it through the rollers of the pasta machine at the largest number. Fold it in 3 like a wallet, and pass it through again, fold it in half and pass it through again and place it on the table. Flour only the table while you should never flour the top part of the pasta. Don't fold the pasta anymore but you just have to pass it through all the thicknesses of the machine up to the penultimate, or third to last. Using a pastry cutter or a glass, cut circles from the strips of pasta. Place a nut-sized ball of filling in each circle. Fold the circle in the center around the ball of filling and look for the opposite flap in the center of what is a crescent-shaped ravioli. From the center of this ravioli, close all the sides. Join the 2 extreme flaps to form a tortello. Place the tortelli on a floured tray. Place a pot of plenty of water on the stove to cook the tortelli and a pan to season them. Place the bacon cut into thin strips in the pan and brown it without any other fat. Place the browned bacon on a small plate. Place the potatoes, mashed with a potato masher or, better yet, sieved through a strainer, in the same pan. Add 3.4 tablespoons of water, salt and pepper, the sage that you will then remove, and mix everything together to transform it into a cream, a very soft puree. Cook the tortelli and mix them with the potato cream, adding the bacon at the end. Or… prepare each individual dish as I describe.
