While the duck is resting, prepare the soup herbs. Place the duck on a rack in a dish and distribute the soup herbs under the rack. Preheat the oven to 120 degrees with hot air and roast the duck for 4 hours. Take the duck out and let it rest for 30 minutes at room temperature. Remove the roasting tin and herbs from the dish. Turn the oven up to 220-240 degrees with hot air and grill function, put the duck back in the oven and brown it for 8-10 minutes, until the skin is crispy and golden. Let the duck rest for another 10 minutes before slicing and serving. Serve with classic Christmas side dishes like browned potatoes, red cabbage and a good duck sauce.
