In the meantime, slice the mushrooms. Add the mushrooms and 3 tablespoons of frying oil to the onions and continue to fry everything together. Meanwhile, season the pork schnitzel on both sides with seasoned salt and pepper mix. First coat the seasoned schnitzel on both sides in flour, then dip in the beaten eggs and finally coat generously with panko. Fry the pork schnitzel in a pan with 100 ml of hot frying oil on both sides over medium heat for a total of 7-8 minutes until golden brown and crispy. In the meantime, add the tomato paste to the onion and mushrooms, distribute well and fry for about 1 minute. Season the mushrooms with seasoned salt and pepper mix and dust with 1 teaspoon of flour, mix everything well and fry for about ½ minute. Gradually deglaze the mushrooms with 70 ml of vegetable stock, allow the stock to reduce and then add the remaining 30 ml of vegetable stock. Add the cream, stir everything together and simmer for about 1 minute over a medium heat. Add the butter to the meat in the pan and melt it. Toss and turn the schnitzel in the melted butter. Remove the schnitzel from the pan and let it drain on a kitchen towel. Add some of the melted butter from the meat pan to the creamy mushrooms and mix well.
