This time I went to Stavreby, which is a small town south of Præstø. Here I visited the restaurant Muldiverset, which is run by Birgitte and Kim Escherich. Muldiverset is the local, sustainable, organic, biodynamic, regenerative and earth-wise food system that is at the center, where the raw materials come from local producers (max. 60 km from the restaurant). Muldiverset's cuisine is flexitarian (vegetables come before meat, but both are included). It will always be possible to eat vegetarian for all meals. Products that are always in season are always used. Raw materials are at least certified organic and preferably biodynamic from regenerative farms. If a given organic product cannot be obtained, menus/recipes are changed accordingly.
