It used to be an exquisite dish, from Hungarian cuisine, which is not very well-known in Poland. Leczo was made on some important occasion. Today it is very popular. And it is suitable for jars. Recipe: Ingredients: 2 kg of tomatoes, 2 kg of peppers, 2 kg of zucchini, 3 large onions. In a classic leczo, there are the same amount of tomatoes, peppers and zucchini. The peppers can only be red or different, red, yellow or green. In addition: a few cloves of garlic, 2 teaspoons of sweet or smoked paprika, 3 tablespoons of marjoram, optionally a teaspoon of chili flakes, oil, 1 flat tablespoon of sugar, salt and pepper. Preparation: wash the vegetables and cut into cubes, about 2x2 cm. The onion can be chopped finely. In heated oil, fry the onion with garlic (chopped rather than pressed through a press). Add tomatoes, zucchini and peppers. The first stage of cooking (about 45 minutes for this amount of vegetables) is basically releasing the juice, in which the vegetables are bathed. Remember to stir in the pot so that it does not burn, but so that all the vegetables release their juices evenly. The next step is to add all the remaining ingredients, i.e. spices. Mix well. Try to see if the dish is salty and tasty enough. Cook for another 10 minutes and it's ready. Now transfer to jars, close well and pasteurize for 10 minutes from the moment the water boils.
