Ingredients: 500 g stockfish, 400 g cardoncelli mushrooms, 3 yellow potatoes, 80 g white onion, 1 clove of garlic, 300 g peeled tomatoes, a sprig of parsley, chili pepper, vegetable broth, salt, pepper, extra virgin olive oil. Procedure: In a pan, fry the sliced onion with a good drizzle of oil, a clove of garlic and a little chili pepper, if desired. Clean the mushrooms and cut them into chunks, then add them to the onion sauce and let it brown for 5-6 minutes. Add the peeled tomatoes and let it cook on a high flame for a few minutes. Peel the potatoes, cut them into wedges and blanch them for 3-4 minutes in boiling water. Drain and add to the mushroom sauce. Add the stockfish in slices, salt, cover with vegetable broth and put the lid on. Let it cook for 15 minutes. Serve with croutons and chopped parsley.
