Hello everyone and welcome to my channel, today I will show you how to make half packets with pumpkin cream and sausage like in a restaurant, let's see the ingredients. We need: 400g of pumpkin, 150g of potatoes, 140g of half paccheri, 250g of sausage without casing, 2 chopped shallots, salt and oil. Let's start by putting 2 liters of water on the stove and adding 30g of salt and bring to the boil. Let's prepare the pumpkin cream, in a pan we heat a drizzle of olive oil, as soon as it is hot we add a part of the chopped shallot and keeping a part for later, let it brown and then add the potatoes and brown them, after a few minutes we add the pumpkin and brown for a few minutes, finally we add 1 ladle of cooking water and let it cook, from now on we add the water a ladle at a time until the potato is cooked, we always add the cooking water little by little until you get a result similar to this one in the video, basically the potatoes fall apart easily. At this point we transfer everything into a blender or like me in the mini pinner glass and blend until we obtain a velvety cream. Add salt if necessary. After making the cream, if the water is boiling you can lower the pasta, the type of pasta I use cooks for 14 minutes so I will have plenty of time to fry the sausage. Let's prepare the sausage, in a pan heat a drizzle of oil, add the shallot and fry it, as soon as it has browned you can add the sausage without the casing and with the help of a wooden spoon crumble it, let it fry well without adding liquids or anything else, simply let it turn or sauté in the pan until you get a similar result. At this point put aside a little cooking water, when the pasta is cooked drain it and transfer it to the pan with the sausage. Now add the pumpkin cream a little at a time and with the help of a spoon turn the pasta to mix everything together, in the end you will have a result similar to this. Plate in a deep or flat plate and decorate with fresh parsley.
