The recipe for pasta with pumpkin and potatoes is very simple to make and, above all, economical. In this case I wanted to give more character to the preparation that perhaps seems a bit flat when it is made in a simple way, so I added the anchovy fillets and the rosemary that give a good dose of flavor and aroma that, in my opinion, earns many points to the preparation. Even the choice of cheese to add was studied: pecorino compared to parmesan gives much more depth and flavor, but if you don't like it, you can easily opt for the more classic parmesan.
