Welcome to Living Gluten Free, how are you? Today I am leaving you with a workhorse…. a spinach pie, the Pascualina as we call it. This is my version, although sometimes I add white sauce, or I add a hard-boiled egg… anyway, everyone makes it how they like it best. The dough is very rich, easy and quick to make… Without further ado I leave you the recipe for Spinach Pie For the dough 200 g of a mix of flours 100 g of buckwheat or sorghum (or you can add more mix of flours) 1 tbsp of xanthan gum 1 tbsp of leavening powder 1 egg 3 tbsp of oil A handful of grated cheese (optional) Salt Water c/n With these quantities you will get one pie, remember that if you want to make the lid you have to make a double recipe.
