Welcome once again to Living Gluten Free. For those who don't know me, because this is the first video you've seen, I'm Vicky. I'm celiac and every week I upload videos of gluten-free recipes. I love cooking, and I love sharing recipes, my experiences, and a little bit of my life so you can get to know me. Today's episode is dedicated mainly to those who are starting the gluten-free diet. At first, everything seems complicated. That's why I'm leaving you with these breaded options. They're super crispy and delicious! Today there are options for everyone: vegetarian, vegan, and of course you can make them with meat, fish, chicken, or pork. 1. The batters we can use are: (just a few, there are many more) Commercial rice batter (the one I had came with garlic and parsley) Commercial batter (the thicker one) Rice flour Sorghum flour Sugar-free cereals Nachos Dehydrated mashed potatoes (instant puree) Polenta Corn flour Chickpea flour Seeds (flax, chia, sesame, pumpkin, sunflower, etc.) 2. For the vegetables, wash them well, cut them into slices, pre-cook them. Let them cool. 3. For the vegetarian option. In a bowl, place eggs, a splash of milk, season with salt, pepper, and whatever you want to add. 4. For the vegan option, use Aquafaba (the water from the chickpeas) and season. Or the tofu whey. Pass the milanesas through the egg or substitute and then through the batter of your choice. You can use just one, or mix two or more. Remember that it is better to combine one thin and one thicker. For the potato bombs. Mashed potatoes, if they are very firm, are better. Filling options: • Cheese • Cooked ham • Salami • Blue cheese • Mushrooms (cooked) • Red chorizo The breading procedure is the same as for the milanesas. You can make them fried or baked. They can be frozen, always with a separator. TIP: Since you are going to make milanesas, make quite a few and freeze them. They always save you!!!!!
