Wash the lemon, rub dry and finely grate the peel. Squeeze the lemon. Mix the peel and juice with garlic, half a teaspoon of pepper and olive oil. Wash the sea bream and pat dry. Rub the marinade inside and out. Wash the parsley, rosemary and thyme and shake dry. Fill the abdominal cavities with parsley. Pick off the rosemary needles and thyme leaves and chop finely. Mix with the sea salt in a bowl. Beat the egg whites until semi-stiff and stir into the sea salt. Finally, sprinkle the flour over them and mix everything well. Line a baking tray with baking paper and spread about half of the salt on top, 1 cm thick, the size of the fish. Place the fish on top and cover all around with the remaining salt. Press down well. Cook the sea bream in a preheated oven at 180°C (automatic roasting) on the 2nd shelf from the bottom for 40 to 50 minutes. For the vegetables, peel the potatoes, wash them and cut them into 0.5 cm cubes. Blanch in salted water for 2 to 3 minutes, rinse in cold water and drain on kitchen paper. Remove the outer leaves from the artichokes and quarter the artichokes. Heat the olive oil in a pan and fry the artichokes in it. Add the potato cubes and fry for 5 minutes. Press the garlic, wash the thyme and shake dry. Add both. Season the vegetables with salt and pepper and put in an ovenproof dish. Finish cooking the artichoke and potato vegetables in the oven on the 4th shelf from the bottom with the fish 15 minutes before the end of the cooking time. Remove the garlic and thyme after cooking. For the butter, peel the limes generously with a knife so that the white skin is also removed. Remove the fillets. Let the butter foam in a pan. Stir in the lime fillets, icing sugar and capers and season with salt and pepper. Serve the sea bream in the salt crust and break it open at the table.
