INGREDIENTS for 2 portions 300 g corn-fed poularde breast, ready to cook 50 g Parmesan grated 50 g cocktail tomatoes halved 10 g capers halved 1 pinch of pepper 0.50 tsp salt 0.25 sprig of rosemary just the needles, finely chopped 0.25 clove of garlic finely diced Place the corn-fed poulard breast in the vacuum bag, spread the cheese mixture around the corn-fed poulard breast. Add the cocktail tomatoes and vacuum seal everything according to the settings. Steam cooker (vacuum sealing): Vacuum sealing Vacuum sealing level: Place 3 vacuum bags on the rack in the cooking chamber and cook according to the settings. Steam cooker (cooking): Operating mode: Sous-vide Temperature: 62 °C Cooking time: 40 minutes Level: 2 Preheat the grill (depending on the appliance). Take the corn-fed poulard breast with Parmesan crust out of the vacuum bag, place in a casserole dish and grill.
