I know how much you love spending time with your family, so I'm bringing you an activity that everyone can do at home, and the best part is that it's delicious. The famous Christmas cookies. For the decoration, I used the snowman cutter☃️, the Christmas tree????, and the snowflake.❄️ Remember that you can use as many cutters and colors as you want. Makes 15 cookies. Here's the recipe for the cookies: ????2 cups powdered sugar (280 grams) ????2 sticks butter (226 grams) ????1 egg ????2 ½ cups all-purpose flour (400 grams) ????1 teaspoon vanilla extract ????1 teaspoon orange zest ????½ teaspoon salt Ingredients for the frosting: ????1 egg white ????2 cups powdered sugar (280 grams) ????½ teaspoon lemon juice ????1-2 drops lemon essence ????1-2 teaspoons milk if needed. Procedure: 1️⃣Combine all the dry ingredients: flour, salt, and powdered sugar and set aside. 2️⃣In a second bowl place the egg, add the orange zest, vanilla extract and stir, beat in the mixer for about 45 seconds, then add the butter which should be at room temperature, beat for 2 minutes. The mixture will not be homogeneous and you will see small pieces of butter, this is okay. 3️⃣Add the dry ingredients all at once, it may seem like a lot, but we need the mixture to be dry. Mix at low speed, only until the ingredients are incorporated, since if we over mix we agitate the gluten too much and the cookie will be very hard. 4️⃣Place the dough on the table and knead for about 30 seconds or give it about 10 turns to make sure the dough is well mixed. 5️⃣Place the dough on two pieces of parchment paper, this is to avoid adding more flour to the formula and not end up with a very dry cookie. Roll out the dough until it is about 1 centimeter thick. Cut out the cookies with your preferred cookie cutter and place them on a baking sheet lined with parchment paper. 6️⃣Place the cookies in the freezer for 20 minutes. Around minute 10, preheat the oven, since we need that temperature shock that will exist between the cold cookies and the hot oven to be able to preserve the shape of the cookies. 7️⃣Bake at 350° F for 15-18 minutes (Here in Erie it is 18 minutes) or until you see the edges of the cookies starting to turn golden. 8️⃣Remove the cookies and let cool completely before applying the royal icing. To make the royal icing: 1️⃣Beat the egg white (I suggest doubling the recipe to make it easier) for 3 minutes, then add the powdered sugar one tablespoon at a time. When you have added half of the sugar, add the lemon juice and continue mixing alternating with the powdered sugar until it is finished. If you wish, you can add lemon essence, orange essence or any other flavor of your choice. If your royal icing is too thick, you can add a few drops of milk to improve it.
