Picanha is one of the most legendary meat dishes in South America and can also be prepared without any problems on your own grill. Heiko Brath shows how to grill Picanha quickly and easily! ______________________ RECIPE: Picanha with Chimichurri For the Chimichurri: • 1 shallot, finely diced • 1 red jalapeño, finely diced • 3 cloves of garlic, finely diced • 90 ml white wine vinegar • Juice of one lime • 1 tsp salt • 1 bunch of coriander, finely chopped • 1 bunch of parsley • 2 tbsp oregano • 100 g virgin olive oil For the meat: • 1 kg Picanha (boiled fillet of beef with a layer of fat, well hung) • 2 tbsp oil • coarse sea salt 1. Mix the shallots, chili, garlic, vinegar and salt and leave to stand for 10 minutes. Mix in the remaining ingredients and season to taste. 2. Preheat the grill (for a gas grill, set the outer burners to medium-high heat; for a charcoal grill, place the glowing coals on the outside). 3. Cut the meat against the grain into 3-4 cm wide slices and place them on large metal skewers with the fat side facing outwards. Rub with oil and salt generously. Grill vigorously on both sides for two minutes on direct heat and then leave to rest on the cooler surface until the temperature reaches 52-54 degrees. 4.
