(You can save the bone and skin part to prepare chicken broth to season the food). Separate the oyster from the chicken for another recipe. 2 - Cut the chicken into pieces and season with salt and pepper. 3 - Place butter and olive oil in the pan to preheat. 3 - Chop the onion and crush the 2 cloves of garlic. 4 - Saute the chicken, carrot, garlic, carrot, thyme and bay leaf. 5 - Add 1 Paris mushroom and a chopped shitake mushroom. 6 - Add pepper to taste, a glass of wine, ½ bottle of cream, 1/3 of lemon juice. 7 - After sautéing with all the ingredients, add parsley. CHICKEN BROTH (to season food) Ingredients: chicken carcass 2 sprigs of thyme 2 bay leaves leek 1/2 carrot 1 carrot water salt to taste juniper Method: Place all the ingredients in a pan and let it boil for approximately 1 hour and a half. Then strain and store in an ice cube tray. Defrost the cubes as you use them. CHICKEN OYSTER (sot-I'y-laisse) Ingredients: chicken oyster (small, dark piece that remains next to the carcass) butter 1 Paris mushroom fleur de sel at will white wine ½ cup of cream 1 pinch of coriander Preparation: Saute the mushroom in butter and add the chicken until golden. Remove the chicken and add the cream, coriander, wine and fleur de sel to the mushroom still in the pan. Turn off and serve the sauce along with the chicken.
