Click here for the recruitment form↓ https://www.sanpi-ryoron.com/recruit/ ■Red and White Pickled Vegetables (serves 4) [Ingredients] 400g daikon radish, 150g kintoki carrots, a little yuzu peel, 1.5 teaspoons of salt A (200cc water, 200cc vinegar, 80g sugar, 3g dashi kelp) [How to make] 1. Peel the daikon radish and cut it into 4cm long strips. Peel the kintoki carrots with a peeler and cut them into 4cm long strips. ※If you are using regular carrots, you do not need to peel them. Place in a bowl, sprinkle with salt (1.5 teaspoons), and leave for about 10 minutes to soften. ② Mix A together. ③ Squeeze out the water from ① thoroughly and add to the mixed vinegar from ②. Remove the white parts and add the shredded yuzu peel. Cover with plastic wrap and leave in the refrigerator for at least an hour. ■Namasu Chinese cabbage (serves 4) *This is the amount for both "apple" and "persimmon" [Ingredients] 400g Chinese cabbage (soft inner part), 1 apple, 1 persimmon, 1.5 tsp salt, a little vinegar A (1 tbsp vinegar, 1 tbsp mirin) B (200cc water, 200cc vinegar, 80g sugar, 1 tbsp light soy sauce, 1 chili pepper, 1 tbsp honey) [Preparation] ① Cut the Chinese cabbage into 4cm strips and place in a bowl. Sprinkle with salt (1.5 tsp) and leave for about 10 minutes to soften. ② Wash the apple with the skin on, remove the stem and seeds, cut into chrysanthemum shapes and soak in vinegar water for a while. ③ Peel the persimmon, cut into strips and mix with A. ④ Mix B together. ⑤ Squeeze out the water from ① and add to the combined vinegar from ④. ⑥ Drain the apples in a colander and mix with half the amount of ⑤. Wrap in plastic wrap and leave to soak in the refrigerator for at least 1 hour. ⑦ Mix the persimmon with half the amount of ⑤, including the juice, wrap in plastic wrap and leave to soak in the refrigerator for at least 1 hour.
