Ursula and Jürgen Knutzen's fish farm is located in Hohenlockstedt in Schleswig-Holstein. The first ponds were created around 1885 through peat mining and were expanded over time by around 30 hectares of pond farming area. Their lands form an ecosystem that provides a habitat for various wild animal species such as reptiles, amphibians, water birds and aquatic insects. But it is precisely this biodiversity that is also a problem: animals such as otters eat the Knutzens' farmed fish and force them to look for other sources of income besides fish farming. Britta Bischoff actually comes from the fashion industry and is the owner of a fashion agency for alpaca knitwear. She dared to make a lateral move and turned her father's former hobby into a business idea: Britta refines salmon in the traditional way, smokes the fish for 50 hours in her own smokehouses and creates unusual fish sandwich recipes together with her husband Jörn Asmus. But first the two had to invest a lot: the smokehouses, the kitchen and the food truck were new purchases. They spent a lot of money on this. That's why Britta is keeping her fashion agency for now and thus also her second source of income.
