ROAST CHICKEN Link to recipe on channel: • Perfect roast chicken! ON THE STOVE: CHICKPEAS Soak the chickpeas in a bowl overnight. Discard the soaking water and, in a pan, place the chickpeas with 1 bay leaf and 1 clove of garlic. Add water to cover. Bring to a boil over high heat, then lower to medium heat and cook until done. As it boils, foam will form on the surface. Remove the first foam that rises with a slotted spoon. When it is ready, season with salt, turn off the heat and cover the pan. Shake the covered pan vigorously, remove the lid and stir quickly and vigorously. This process will cause the skins of the chickpeas to come off. Add cold water, cover the pan again and wait a few minutes for the skins to rise. Remove and discard the skins from the surface with a sieve and drain the water before serving or storing. BEANS Soak the beans for a few hours (optional). Roughly chop the onion, leek, garlic and pumpkin and sauté them with olive oil in a pressure cooker (if you don't have a pressure cooker, you can do this in a simple saucepan). Drain the beans, transfer them to the pan with the vegetables and add 1 bay leaf and 1 piece of ginger, stir and let them thicken a little in the seasoning. Add hot water to cover, close or cover the pan and let it cook until it reaches the right point. When it's ready, season with salt. BROWN RICE Soak the rice in a bowl for approximately 20 minutes. In a pan, add olive oil and sauté the chopped onion until it becomes transparent. Add ginger, 1 bay leaf, garlic and continue sautéing with the onion. Add the rice and, stirring constantly, let it thicken well. Add hot water to cover, season with salt, stir and partially cover the pan until it reaches the right point. BOILED POTATOES In a pan, add the potatoes, fill the pan with cold water, add salt, fresh rosemary and 1 clove of garlic. Cook until tender, drain the water, transfer the potatoes to a container and drizzle with olive oil. ORIENTAL GROUND BEEF In a pan, add olive oil and sauté chopped onion and leek until golden. Add the ground beef with freshly ground cumin, ground cinnamon, salt and 1 bay leaf. Stir well and sauté until tender. MARINATED PORK LOIN Cut the loin into cubes, place in a baking dish and add grated fresh ginger, chopped chili pepper, soy sauce and sesame oil. Leave to marinate overnight. ROASTED VEGETABLES Cut the peeled onions into half moons, roughly chop the unpeeled pumpkin, cut the tomatoes into half moons and separate the cauliflower into medium pieces, removing the leaves. Transfer everything to a baking sheet, add whole cloves of garlic, season with salt and black pepper and drizzle everything with olive oil. Cover the baking sheet with aluminum foil and bake at 180 degrees for approximately 20 minutes, remove the aluminum foil and finish baking until golden. BAKED EGGPLANTS Cut the eggplants in half, make light cuts on the surface of each half forming an x, transfer to a baking sheet, season with salt, drizzle with olive oil and bake until soft and golden.
