INGREDIENTS: FOR THE CARAMEL: 4 tablespoons of sugar 3 tablespoons of water 1 round mold with a central hole 20cm in diameter or normal mold FOR THE FLAN: 150 g of oat flakes = 1 + ½ cups = 15 tablespoons. 220 g of sugar = 1 cup = 12 tablespoons 110 g of cornstarch = 1 cup = 10 tablespoons 1 tablespoon of vanilla essence or other essence of your choice. 500ml of the water used to soak the oats 500ml of water, or milk, or vegetable milk (whichever you prefer to use) PREPARATION: CARAMEL: Put the mold on the heat, add the sugar and water and let it boil and start to change color, move the mold and when you see that the sugar has melted and without letting it get too dark, remove from the heat and return to the mold so that it covers all the walls, it will always remain somewhat soft, set aside to cool. FLAN: Soak the oats in fresh water the night before. The next day, strain the oats and after straining them, place them in the blender glass. Add the sugar to the blender glass. If the water from soaking the oats does not reach 2 cups (half a liter, 500 ml), fill it with water and dissolve the cornstarch very well there, then add that mixture to the blender glass. Add the vanilla or almond essence or the essence you use, you can also use cinnamon or some liquor. Now start blending until you see that it is well homogeneous, let it blend for at least 3 minutes. Add the other half liter of water or milk or vegetable milk, whichever you prefer to use, in total you will add 1 liter of liquid, the half liter that you added at the beginning with the cornstarch and this half liter that you add now. Blend a little more. In a pot or saucepan, place the mixture that you made in the blender and bring to medium heat, stirring always so that it does not stick to the bottom of the pot and can burn, let it begin to boil and thicken, let it boil for 1 minute, stirring always, it should be very thick and remove from the heat. Once it is very hot, place it in the mold that already has the caramel, let it cool to room temperature, cover with aluminum foil and put it in the refrigerator and leave it for at least 4 hours in the refrigerator, if you can leave it overnight, much better.
